Everyone was missing it! Finally we got the real Copy and Paste application for the Apple iPhone and iPod Touch! It’s Clippy, avaiable from the iSpazio Repository in Cydia:
http://ispaziorepo.com/cydia/apt
After installing open note or mail or any text app and bring the Clippy interface tab by tapping "123" button

Now simply select any text by dragging your fingers from left to right and tap "Copy"
